Cool the cheesecake in the refrigerator for at least four hours, but until completely cooled. Remove the cheesecake from the oven and place on a cooling rack. Firmly press crust mixture into the bottom of the pan to keep the pie together. This will keep the pie from sticking to the pan. Still using low speed on the mixer, add the chocolate and mix well. Bring the water to a rolling boil, and put the smaller pan containing the chocolate inside the boiling water. Pour cookies from bag into small mixing bowl and add melted butter, mixing until evenly coated. Place remaining butter in small microwave safe bowl and warm until melted, approximately thirty seconds. Place chocolate squares inside the small saucepan and fill the medium saucepan halfway with water. It must be continuously stirred to avoid burning. The cream cheese may still be a little hard, if so, microwave it for one minute to help soften it.

The care put into the preparation of the pie filling will be shown in the finished product. Set the large mixing bowl aside, it’s time to melt the chocolate. Much care and considera-tion must be used when melting chocolate; lack of attention will cause the chocolate to scorch and burn. In the large mixing bowl, blend cream cheese, sugar, and vanilla extract until smooth on medium speed using the electric mixer.
