Brewpub or Brewery

             The decision between a brewpub and a microbrewery can be structured in terms of many variables: initial cost, return on investment, building (size, location, appearance), equipment (size, appearance), staff size, growth potential, distribution, product portfolio (risk), licensure, tax, etc. In short, they are different businesses, with completely different work schedules, facilities, income patterns, etc.; the brewing of beer is the sole unifying factor. This section is to serve as a prompt for discussion on which business aligns more closely to the goals we set in the previous section.
             By brewpub, we mean a brewery establishment serving beer (and perhaps food) for on- (and perhaps off-) premise consumption by an immediate customer. This sort of establishment might also brew beer for distribution beyond its premises (i.e., stores and other restaurants) to indirect customers.
             The initial investment in this sort of business would seem to be larger than that for a microbrewery. The reasons for that are:
             1. A brewpub involves customer-facing facilities (A brewpub serves customers IN their facilities...demanding a neater, appropriate building than a microbrewery, which might suffice with an industrial style building.)
             2. A brewpub necessarily concerns itself with the traditional "traffic" and "capture" concepts. (A brewpub must be located in, or near, a body of people; it must be in a convenient location, etc.)
             3. A brewpub ordinarily must use food as a drawing point; food normally constitutes nearly a half of total sales in brewpubs, necessitating the purchase of kitchen equipment, space, and perhaps staff.
             4. As a brewpub, the building will be occupied (requiring permits, inspections, etc.) by customers; the consumption of food might involve further licensing and inspections, permits, etc.
