to a book that claims to be "the complete guide to adopting a healthy plant-
based diet," a vegetarian diet is one completely lacking all flesh, fish,
and fowl. Vegetarians that do consume milk and eggs are known as lacto-ovo
vegetarians (though are most commonly referred to simply as "vegetarian"),
while those that exclude all animal products and byproducts are known as
strict vegetarians, or vegans. (Davis 1,4) Vegan diets include fruits,
vegetables, grains, legumes, nuts, seeds, and many other foods, and are not
in the least bit boring or repetitive like many meat-eaters would suspect.
This dietary choice is constantly gaining popularity and may be adopted for
any number of reasons including a desire to be more healthful. "A 1995
Roper Poll conducted for the nonprofit Vegetarian Resource Group found that
children from 8 to 12 years of age are becoming vegetarians at twice the
rate of adults. They're doing it because they have compassion for animals
and an interest in saving the planet from environmental destruction caused
by raising animals for food." (Havala 247) Turning away from meat is a
choice that many young people have decided to make, and it is also a choice
that many parents have decided to share with their infants and children.
The most basic reason that a vegetarian diet is a wise choice for
many people to make is that, simply put, meat and other animal products are
not healthy. "Meat, dairy, and egg products are making people sick....They
have absolutely no fiber or complex carbohydrates in them, and they are
packed with saturated fat and cholesterol." (Friedrich, Human Health)
